War of the Worlds, Flatland, The Wizard of Oz, and Last of the Mohicans are always on my palm pilot. If you like Doctor Who, the BBC has a nice classic page with downloads of novels from every era.

Richard Burton's A Personal Narrative of a Pilgrimage to Al-Medinah and Meccah is quite fascinating and in places hilariously funny.
NB that's the explorer, translator, writer, soldier, orientalist, ethnologist, spy, linguist, poet, fencer and diplomat Richard Burton, not the actor.
Charles Darwin's On the Origin of Species is also a good read.

I was going to mention Darwin, but Henrick beat me to it. I'm a big Jules Verne fan, and of course all that is out of copywrite. I recently (within the last year) downloaded 'Call of the Wild' and 'White Fang' by Jack London.

Hmm.. What did I download from there.. I liked books from David Weber, Eric Flint, David Drake. Some titles I notice at a glance: Mutineers' Moon, Fallen Angels. They're not all potentially Nobel prize winning novels, but to me they were fun to read.
But really, it's just "browse around, read descriptions, and pick", and see if you like that particular author. That's why Baen is giving them away for free in the first place. Sometimes a quick trip to wiki or some other site with author info may help in deciding whether you're really going to, or continue to read some book.
Also, there is quite a bit of discussion about ebooks being made available for free on the internet (websites, usenet, torrents) by others than the copyright holders. The amount of talk about it suggests that there might be a lot out there, but of course I wouldn't know anything about any such highly dangerous and society-undermining illegal practices.
ETA: try browsing through the "what are you reading" thread, perhaps it may lead you to some great reading too.

Check out http://www.webscription.net/. There's a lot of scifi. Not free, but cheaper than most ebook stores.
